Espresso Caramel Bars

Butter Cookies from Jessica

1 cup unsalted butter, room temp.
2/3 c. sugar
1 large egg
1 tsp. lemon or orange zest
1 tsp. vanilla
2 1/4 c. flour
1/2 tsp. salt

With a hand mixer, beat butter and sugar until light and fluffy. Beat in the egg, zest, and vanilla.

In a separate bowl, whisk flour and salt. Gradually add flour mixture into creamed mixture and heat until just incorporated. Scrape down sides

Roll into "logs" about 2 1/2 inches in diameter and chill. Slice and bake in a 350 degree oven.
